Seven Senses held a French-Italian wine pairing dinner on Thursday, Oct. 25, featuring premium wines from various parts of France and Italy as well as professionally prepared food by Chef Chad Combs. Nearly 60 guests enjoyed 6 paired courses at the event held at The Putnam Room on Cookeville’s historic courthouse square. The menu consisted of the following:
Course 1 – Bouvet Ladubay Saumur Brut
– Apple & goat cheese bruschetta
– Sugar-cured salmon w/champagne mignonette
– Beer-battered jumbo lump crab w/honey chipotle drizzle
Course 2 – Domaine Zind-Humbrecht, Alsace Pinot Gris
Crispy pork belly w/caramelized corn emulsion
Course 3 – Maison Louis Jadot, Puligny-Montrachet
Lobster bisque
Course 4 – Chateau des Jacques, Moulin-a-Vent
Seared duck breast w/orange lavender beets
Course 5 – Agricola Punica, Isola del Nuraghi Barrua
Coffee-crusted venison tenderloin w/bleu cheese & sage risotto
Course 6 – Michele Chiarlo, Moscato d’Asti
Apricot eclairs w/peach white chocolate
